Great precision in the approach and execution

The 6 hectares of Sauvignon Blanc and then Sémillon are harvested manually in September, early in the morning, in order to preserve the aromatic freshness of the grapes.

Several successive grape selections according to ripeness

The manual harvest is conducted through multiple grape selections, picking the grapes as they reach optimal ripeness. Only the golden bunches are picked. At least three rounds of selection (and up to four or five in challenging years) are necessary for a precise and thorough harvest. Each selected bunch is then meticulously sorted on the vine and placed in crates.

Slow pressing at low pressure

A pneumatic pressing of whole bunches at low pressure (without destemming and crushing) allows for the flow of must of the greatest purity, without any plant residue.

Settling and Fermentation in Barrels

After natural settling by gravity, fermentation in very high-quality barrels allows for the preservation of the identity of each pressing.

A highly precise blending and aging on lees

Tasted one by one, the vinified barrels offer a choice of blending with very high precision and great complexity. Aged for 9 months in French oak barrels on fine lees, these white wines are bottled before the following summer.

Great typicity and good aging potential

L’ensemble de ces choix, réalisés avec une grande minutie, confère au vin son caractère précis, intensément fruité, à l’accent minéral de son terroir. All these choices, made with great care, give the wine its precise character, intensely fruity, with the mineral accent of its terroir. Its freshness, structure, elegance, and beautiful length on the palate give it a true aging capability. A few years in the cellar reveal an aromatic and gustatory complexity that offers numerous food and wine pairing possibilities.
