In 1993, in order to fully devote themselves to spiritual activity,
the Holy Sisters of the Estate asked the Bernard Family to run the
vineyards. The Bernards are owners of Domaine de Chevalier, one of
the most prestigious “Cru Classés” of Pessac-Leognan.
Olivier Bernard has opted for a “Grand Cru” management
of the Estate. The harvest is done by hand and by successive selection:
3 passages like Domaine de Chevalier. Also, considerable investment
has been made: a pneumatic press, stainless steel fermentation tanks
and oak barrels.
